Each release begins with one of our core spirits, carefully rested in select whiskey barrels. Over months and years, the botanicals evolve, developing new dimensions of depth, warmth, and character that only time can reveal. These limited bottlings honor the art of transformation — where familiar flavors mature into something entirely new, and each barrel tells its own quiet, distinct story.

Yerba Santa

An herb native to the chaparral regions of the western United States and Mexico, Yerba Santa once held a prized place in the medicinal practices of both natives and Spanish missionaries. We love it because of its unique herbal character - it is like mint, tea, and licorice were combined into the beautifully serrated leaves of this unique plant.

Spearmint

Spearmint plays a leading role in many drinking traditions, from mint tea to mint juleps. Its striking taste profile makes it immediately identifiable, and almost universally loved. We could not imagine a better ingredient to layer into our Chaparral to bring to life the taste of this aromatic, herbal landscape.

Aged in Rye Whiskey Barrels

In February 2023, Chaparral was rested in a Wild Turkey Rye Whiskey barrel, whose deep “alligator” char transformed the amaro. Over time, its bright mint and tarragon softened into layered notes of anise, cinnamon, and oak, while the herbal character of the rye whiskey harmonized beautifully with California yerba santa and bay laurel.

Barrel-aged, perfectly balanced

In February 2023, the finished maceration of Chaparral was introduced to a 53-gallon, freshly emptied Wild Turkey Rye Whiskey barrel. Wild Turkey is known for using a very deep "alligator" char, which proved transformative. Over time, the crisp, fresh mint and tarragon notes of the original Chaparral mellowed, giving way to a much deeper, more complex nose of anise, cinnamon, and oak. Furthermore, the lingering herbal notes from the rye whiskey beautifully enhanced the native California yerba santa and bay laurel in our recipe.

Just as with Woodlands, an experiment with small 15-gallon new oak barrels was crucial. Though these barrels initially imparted a dusty oak flavor, they surprisingly accented the anise and provided an irresistible full, rich mouthfeel and a beautiful dark hue. We blended the two barrels, using the smaller batch to create a finishing touch that brought everything into sharp focus.

As opposed to the Woodlands Reserve, we opted to use a touch less sugar than our standard release, as the oak naturally pulled out incredible sweetness from the botanicals. The final Chaparral Reserve is rich, full-bodied, and a stunning showcase of how patience and creativity can elevate the spice and herbal liqueur category.
